The HFC Hospitality Studies Department will hold its Food & Wine Pairing Dinner Thursday, April 25, at 5:30 p.m. at Fifty-One O One – HFC’s student-run restaurant, located in the Student & Culinary Arts Center (Building M) on the main campus.

The proceeds from this dinner will benefit scholarships for culinary students. HFC is partnering with Edible WOW, Sandhill Crane Vineyards, Calder Dairy & Farm, White Pine Coffee, and Tito’s Handmade Vodka to host this five-course scholarship dinner.

“It’ll be a great event. I look forward to this scholarship dinner every year. We are very fortunate to have these partners. Each course will be paired with a Sandhill Crane wine. Our dessert will feature Calder Dairy products. We will have a cocktail hour at the beginning with a cocktail from Tito’s and hors d’oeuvres,” said HFC Chef de Cuisine Joseph E. Cosenza, who promoted the scholarship dinner when he appeared on FOX 2.

Menu highlights include:
Rabbit: Porchetta-style saddle, spring vegetable salad, and a 2016 Merlot
White Asparagus: Chilled soup, chervil cream, chives, and a 2016 Sur-Lie Chardonnay
Scallop: Hazelnut-morel crust, nettles, chard, and a 2016 Proprietor’s Reserve Traminette
Lamb: Braised shank, stuffed loin, peas, artichokes, and a 2016 Estate Marquette
Espresso Affogato: Espresso granita, vanilla gelato, cocoa nib brittle, and an 840 Port-Style dessert wine

Coffee and tea service are included. Pre-dinner cocktails and dinner wine pairings are also included. Additional alcohol will be available for purchase at the cash bar. The cost to attend the dinner is $80 per person, $30 of which is a tax-deductible donation to the HFC Hospitality Fund.
