Courses VIII: Student Scholarship Dinner April 24

HFCC's Culinary Arts Department will hold its Courses VIII: Student Scholarship Dinner on Thursday, April 24, at 6 p.m. at Fifty-One O One – HFCC’s student-run restaurant located in the Student & Culinary Arts Center on the main campus.

This year’s theme is Spring: A Seasonal Tasting. At this dinner, the following cuisine will be available:

  • butter-poached lobster;
  • roasted breast of organic chicken;
  • asparagus;
  • ramps;
  • morels;
  • stone ground grits;
  • baby romaine;
  • carrots;
  • baby red oak & green romaine;
  • red radicchio;
  • crispy sweetbreads with blood orange aigre-doux;
  • meyer lemon coulis;
  • fried garlic; and
  • radish greens.

Michigan strawberries, satuernes cake and olive oil ice cream will be available for dessert. Beer and wine are available for purchase at a cash bar.

“Peas, asparagus, morel mushrooms and green garlic return to our menus after the long, hard winter we’ve had. Summer’s bounty is just over the horizon, reminding us of our good fortune to live, work and cook in this special place,” said Joseph E. Cosenza, HFCC Culinary Arts instructor and chef de cuisine.

The cost is $45 per person, $30 of which is a tax deductible donation to the HFCC Hospitality Scholarship Fund. To purchase a seat at this dinner, please send checks or bring cash to the HFCC Foundation Office, located in Room 420 of the Andrew A. Mazzara Administrative Services & Conference Center (ASCC) at 5101 Evergreen Rd., Dearborn, MI 48128-1495. Please note in the memo section that payment is for the Hospitality Scholarship Dinner.
