The HFC Culinary Arts + Hospitality Management program is delighted to invite our community to the Fall Scholarship Event: Courses XXVI Chef’s Dinner – “A Fantasy of Michigan Apples.” This event is a culinary extravaganza featuring exquisite dishes and entertainment. This dinner supports the HFC Hospitality Scholarship Fund.

Please join us for the Courses XXVI Chef’s Dinner at Fifty-One O One, HFC’s student-run restaurant in the John McDonald Student and Culinary Arts Center (Building M on the main campus), on Saturday, Nov. 2, at 6:00 p.m.

“This year’s theme, 'A Fantasy of Michigan Apples,' celebrates the culinary diversity of our region while showcasing the talent and dedication of our students," said HFC culinary arts instructor and Fifty-One O One maître d'hôtel Lauren Wallace.

Dinner Details

The following entrees will be served at the Courses XXVI Chef’s Dinner:

  • Sunchoke and Honeycrisp Apple Salad: Smoked Michigan whitefish, grapes, Marcona almonds, horseradish vinaigrette
  • Chestnut and Gala Apple Soup: Apple-brandied chestnut chutney, confit of duck gizzard, thyme oil
  • Roasted Honeynut Squash: Braeburn apple-Morcilla ragu, quinoa, creamed leeks, pickled pink lady apples
  • Cider Braised Short Ribs: Sweet potato dumplings, Swiss chard, caramelized granny smith apple, pickled chantarelles
  • Apple Trio: Almond apple financier, poached apple compote, brown sugar phyllo dough crisp, spiced caramel sauce, apple tatin ice cream

As part of the experience:

  • Coffee and tea will be provided.
  • House-made bread will be served.
  • Beer and wine will be available to purchase for guests ages 21 and older with a valid photo ID.

Schedule

  • 6:00 p.m.: Cocktails and hors d’oeuvres
  • 6:30 p.m.: Dinner and program

Tickets

Tickets are $65 per person. Of that amount, $30 is a tax-deductible donation to the HFC Hospitality Scholarship Fund.

If you prefer not to pay online, you may send a check or bring cash to the HFC Foundation Office on the third floor of the Welcome Center at 5101 Evergreen Rd., Dearborn, MI 48128-1495. Please make checks out to the HFC Foundation and note in the memo section that the payment is for the Fall Scholarship Dinner.

The Courses XXVI Chef’s Dinner promises a culinary adventure and also serves an important cause. By attending, you will contribute to the education and development of future culinary professionals through the HFC Hospitality Scholarship Fund.
